Every jar has a lineage — from the farm where the ingredient grew to the hands that prepared it. Here's how this one came to be.
This recipe was gifted to our grandmother by a Kashmiri neighbor who moved to Punjab during the 1990s. The woman missed her homeland terribly and found comfort in recreating the flavors of Kashmir in her new kitchen. She shared this apple murabba recipe as a gesture of friendship, and it has been in our family ever since.
We source crisp Kashmiri apples directly from orchards in Shopian and Pulwama — the apple heartland of India. These high-altitude fruits have a natural sweetness and crunch that lowland apples simply cannot match. Our cardamom and cloves come from the spice gardens of Kerala's Idukki district, where the tropical climate produces the most aromatic spices in the world.
Each apple is peeled, cored, and cut into thick rounds, then gently poached in a light sugar syrup infused with cracked cardamom pods and whole cloves. The murabba is then transferred to wide glass jars and allowed to mature for two weeks. During this time, the apple slices become translucent and jewel-like, absorbing the spiced syrup until every bite bursts with flavor.
Delicate and aromatic with the comforting sweetness of cooked apples. The cardamom adds a citrusy, almost menthol-like freshness, while the cloves contribute a warm, numbing spice that lingers on the tongue. The syrup itself is like liquid gold — fragrant, warming, and utterly addictive.
