The jar’s note
Raw mango, seven spices and mustard oil, cut by hand and left in an earthen crock for six weeks under the sun. Sharp first, then warm: the fenugreek and the fennel arrive after the chilli does.
How it is made
Hand-cut into uniform pieces, sun-dried for two days to draw the moisture out, mixed with a seven-spice blend, then aged in earthen crocks under the sun for at least six weeks. No shortcuts, no artificial accelerators.
