The Story Behind This Jar
Every jar has a lineage — from the farm where the ingredient grew to the hands that prepared it. Here's how this one came to be.
Family Heritage
This oil-free lemon pickle is a Gujarati treasure from our maternal grandmother's recipe box. She was known for her ability to balance sweet and sour with mathematical precision. This pickle was her signature gift to neighbors during festivals, and the tradition of sharing it continues through every jar we make.
Ingredient Sourcing
We use plump, juicy lemons sourced from the citrus orchards of Nagpur — the orange city also happens to produce India's most flavorful lemons. Our jaggery is organic, sourced from Kolhapur, Maharashtra, and the black salt comes from the ancient salt mines of the Himalayan foothills, giving it that distinctive sulfurous depth.
Artisan Process
The lemons are quartered and layered with jaggery, black salt, cumin, and ajwain in wide-mouthed glass jars. Unlike oil-based pickles, this one relies on the natural citrus acids and sugar to preserve and transform the fruit. Over four months of patient maturation, the lemon rinds soften, the juices meld, and a syrupy, sweet-sour magic develops.
